Molecular masterclass

We welcomed Chef Rolf Caviezel to our IMI kitchens to take our culinary students through a molecular gastronomy masterclass...

There is a lot of debate in the culinary world as to how much we actually ‘eat with our eyes’ and the importance of exact presentation…

At IMI, taste, flavour and the best ingredients will always be our key watch-words but, if a dish can also look amazing, all the better!   

To this end, we were delighted to welcome molecular gastronomy specialist Mr. Rolf Caviezel to our kitchens to run a special session with our International Culinary Arts students.

Chef Caviezel, whose company Freestyle Cooking is the first online platform in Switzerland to bring together innovative thinking in the field of gastronomy, took our students through a range of techniques and dishes.

We were told to remain calm as various bangs were heard and smoke came pouring from the kitchen, but the end results were well worth waiting for...  

Students’ skills were tested producing treats such as vanilla pearls, raspberry natural yoghurt drops and chicken paper with sesame. Not only did the plates look amazing but the taste and flavour also packed a punch.

We would like to thank Chef Caviezel for a thoroughly entertaining and informative session and look forward to the next time he comes to experiment in our kitchen!
