Research Title: Heloe dessert - reformulation of the water droplet cake
Attempting the highly challenging task of introducing a new, healthy dessert to the culinary market, Nerryn used her presentation to explain the concept behind her 'Heloe dessert'. The water droplet cake contains ingredients rich in anti-oxidants, fibre and vitamins and was carefully constructed to ensure the health benefits did not stand in the way of taste and market viability. The audience was impressed with Nerryn's concept and enjoyed the sample flavours she provided for tasting.

Mr. Sutton founded his small, one-man craft beer brewery in an old butcher's premises in the Engelberg valley town of Dallenwil in Central Switzerland. Producing a range of beers, ales, and now gins, he develops recipes, packages, prices and markets his products for the beverage industry. In his presentaiton, he explained to the students the challenges of starting out as an entrepreneur and bringing a new product to a competitive market.
