Mediterranean Culinary Masterclass

Our students took a culinary journey to the Med. as they were guided through some fresh and vibrant recipes by our very own Mr. Georgiou...

The flavours of the Mediterranean bring to mind beaches, sunshine and fresh, vivid ingredients and tastes.

We brought a small part of the Med. to our IMI kitchens, as our culinary students were treated to a special masterclass by IMI's Cypriot-born lecturer Mr. Georgiou.

Inspired by his rural upbringing, surrounded by fresh, natural ingredients, Mr. Georgiou took our students through some of his favourite recipes from home as well as a few southern European classics.

Having collected milk from the local farm that morning, students learnt how to make their own Mozzarella – a staple of any Italian dinner table.

From the sea, we had fresh-caught salmon which was cured using a homemade brine with the remainder being smoked directly in the classroom using constructed wood-chip smoking trays.

To satisfy those with a sweet tooth, students prepared a traditional Cypriot ‘Orange Spoon Sweet’ and orange and wild berry marmalades.

As if that wasn’t enough, Mr Georgiou also demonstrated how to pickle cucumbers and make infused salts (fresh herbs, orange zest and zinfandel) as well as fresh thyme butter.

The workshop was a lot of fun, with students learning new skills which will serve them well both at home and in a professional culinary environment.

It was telling that a lot of IMI staff members found their way to the kitchens just in time for the tasting…
