Swiss Room Special

16 July 2018

As has become tradition, the last Swiss Room lunch of the term saw students specially invited for a seven-course, culinary extravaganza...

We are very lucky at IMI that we have the opportunity to enjoy a fine-dining meal each lunchtime in our Swiss Room restaurant.

To celebrate the last opening of each term, our culinary and service team go all out delivering a spectacular seven-course feast with each course accompanied by a specially selected wine-pairing.

To thank our students for supporting the restaurant, we invite those who have booked the most times during the term to come and enjoy this culinary experience and celebrate another successful term of work and play.

This term’s menu opened with an amuse bouche of house cured salmon, fish roe and crème fraiche served with a white wine spritzer. A tapas starter followed before a main course of chorizo stuffed rigatoni with lamb consume and a lemon meyer emulsion.

Dessert was a Mediterranean spiced honey cake with glazed figs and passion fruit crème anglaise before a cheese board with Mato and Garrotxa domes, saffron biscuits, port wine foam, candied nuts and macerated cherries.

Our BA (Hons) Culinary Arts students who excelled themselves in taking on this complex menu and sending out dishes that not only tasted incredible but looked beautiful as well.

We will miss the Swiss Room over the term break but look forward to enjoying more modern, exciting and, most importantly, delicious cuisine in term C…
