Seven Course Heaven

Our BA (Hons) Culinary students took over the Swiss Room restaurant kitchen to serve a special seven-course tasting menu to celebrate the term end...

We are big fans of traditions here at IMI and few traditions have proved more popular than our end-of-term, fine-dining celebratory lunch.

With our final-semester culinary students in complete control of the kitchen, it is always exciting to see the menu they will prepare and deliver – putting their week and months of training into full use for one gastronomic extravaganza.

Naturally, everyone on campus is keen to reserve a seat for this event and a lucky group of students are drawn at random from those who have made the most Swiss Room reservations over the course of the term.

The guests were treated to a culinary journey that spanned many different countries and food cultures. Opening with a Mediterranean inspired prosciutto, tomato and basil amuse bouche, the menu moved on to a cold zucchini soup and shrimp, cucumber and sour cream appetizer.

A lemon sorbet interlude cleansed the palate before the fish course of Hamburg pannfish followed by a Swedish meatball and lindenberry sauce main course. A pear tart dessert was preceded by a Deichkäse cheese board to complete the meal.

Diners were also able to enjoy wine pairings with each course including a Valdo Garda Prosecco welcome drink, a 2018 Rheingau Riesling, a Bourgogne Pinot Noir and a Mertes dessert wine.

Our students really delivered on each and every course with diners unanimous in their praise for both the flavour and presentation value of each dish. We would also like to thank our service volunteers who performed a smooth and efficient job to compliment the fine-dining experience!
