Forward-thinking food!

It was great to welcome Swiss company Planted. to the IMI kitchens to give our students a demonstration of their meat substitute products...

One of our key responsibilities as a hospitality and culinary school, is keeping up with the latest trends and movements in these fast-developing industries.

Over recent years, there has been a clear shift in the food industry to exploring new, meat-free, ethically produced products reflecting not only people's greater health consciousness, but also the growing awareness of the impact food production has on our environment.

We are lucky that Switzerland is home to many companies and producers who are at the forefront of this movement and it was great to welcome Zurich-based Planted into our IMI kitchens to give a live demonstration to our students.

Starting as part of a study project at ETH Zurich, Planted has evolved into a food production business with a unique approach to meat production. Their motto being “planted not butchered,” their meats are entirely animal-free with the only ingredients being pea protein, pea fiber, sunflower oil and water.

Co-founder Pascal Bieri was kind enough to spend time with our culinary students and explain the concept behind the company as well as demonstrating a selection of dishes made using the Planted products.

Of course, the real challenge with a lot of animal-free ‘meat’ products for meat eaters is taste - with the complaint often being that it does not compare with the animal product. However, we are happy to report that our students and faculty were very surprised with the authentic taste of the Planted.chicken product sampled.

It is unrealistic that everybody is going to become vegetarian or vegan overnight; however, the more companies like Planted that there are, offering tasty, sustainable alternatives to animal meats, the more chance we have of hoping to tackle the environmental issues that our planet is facing.
