Seven (Course) Heaven

Our training restaurant team pulled out all the stops once again this semester as we celebrated the special end-of-term lunch...

Our Swiss Room training restaurant is a place of great joy, where culinary creations are born and students and staff enjoy some amazing lunch experiences.

Without doubt though, the highlight of the term is the last-day lunch where our BA (Hons) Culinary students put all their accrued knowledge together to deliver a seven course spectacular fine-dining experience.

The specially invited guest list includes students who have been the Swiss Room's best customers over the term as well as their plus ones.

Starting with crispy fried Camembert bacon rolls and red currant jam and Normandy porcini mushroom tartlets, the menu then moved to Tuscany in the form of a traditional winter soup with seasonal vegetables.

A beef carpaccio appetiser followed before we returned to Tuscany for a traditional salad with a gorgonzola dressing. Having hit France and Italy we then moved on to Spain for a main course of Galician entrecôte with hand-cut fries.

Already quite full, it was still impossible to resist the home-cured pork and lamb served with Spanish Manchego cheese and the final dessert 'Torta Barozzi' an almond, peanut, coffee and dark chocolate tart.

Each of the main courses was served with a wine pairing selected by our resident expert Mr. Georgiou and the restaurant service was carried out impeccably by our Diploma hospitality students.

The lunch really was a special treat and we would like to congratulate our culinary students who came up with both the conception and delivery of the menu. We look forward to many more Swiss Room experiences when it opens next term…
