The environmental impact of all our actions is coming under greater scrutiny all the time and one particular area of focus is our eating habits.

Our dietary choices can have a real effect on our carbon emissions and consumption of animal products is a key contributor to this.

One Swiss company attempting to encourage us to reduce our meat consumption is planted, who produce a range of meat alternatives from plant-based fibres.

Planted is the brain-child of two Swiss cousins who, in collaboration with a student from ETH Zurich, wanted to find more ethical and sustainable food processing methods.

With a view to discovering more about how this innovative company has developed over the past four years, we took our Culinary Arts students to visit their nearby Kemptthal production factory.

As much science lab as traditional food processing centre, the students were treated to a guided tour of the factory where they learnt how the planted products are developed from fibres produced in the laboratory from plant proteins. 

It was fascinating for the students to learn about such a forward-thinking approach to food and the environment and they were really impressed with the company's commitment to sustainability at every stage of their process.

To round the day off, the students were gifted some of planted's raw product that they can now marinate and flavour in their own way back in the IMI kitchens.
