There is no greater theatre in a bar than the art of cocktail making.

Much more than just drink preparation, the best barmen put on a performance that both enhances the customer's experience and brings the drink and its ingredients to life.

To induct our students into this glamorous artform, we were very pleased to welcome cocktail expert and flairtender Ilias Kousis onto campus to hold a two-day mixology masterclass.

Trained in Greece and now heading up the Barphilosophy company in Germany, Ilias has a real passion for bar service and travels Europe to offer training seminars, displays and bartending workshops. 

Traditionally a mixture of spirits, sugar, water and bitters, the 'cocktail' evolved to frequently include a liqueur by the 1860s. Nowadays, traditional cocktails such as the Old Fashioned and the Manhattan are offered alongside newer variants with ever-more creative names and presentations.

With growing popularity post-prohibition in the United States, cocktail bars became known as much for the smart, professional and knowledgeable service levels of their bartenders as for the drinks themselves.

Today, bartending and drinks presentation has become even more of an artform with flairtenders such as Ilias combining speed, balance and even a little bit of magic in their preparation and serving of drinks.

Our students were able to enjoy comprehensive training over the two days, starting with the pouring of the liquids and moving on to mixing, glass decoration and even a little juggling.

We would like to thank Ilias for a truly engaging and entertaining two days and look forward to seeing our students’ new skills in action at the next IMI cocktail hour!
